You Have to Make This Peanut Butter Veggie Stir Fry Recipe

Peanut butter and veggies go together like… salt and pepper. Honestly, to me, peanut butter is even better in savory dishes than in sweet ones! Peanut butter adds the perfect flavoring to an already tasty dish.

This veggie stir fry features a number of healthy vegetables! It features asparagus, corn spears, bell peppers, cashews, onions, red cabbage, and much more! But you can always throw in whatever vegetables you have handy at home.

The tasty sauce features peanut butter, vegan chicken broth, tamari, and sriracha. (My mouth is watering already just thinking about this dish.)

This peanut butter veggie delight stir fry is simple, yet oh, so satisfying. It’s colorful and tasty—your whole family is sure to enjoy it. I hope you like it!

You Have to Make This Peanut Butter Veggie Stir Fry Recipe

Ingredients

  • Sauce:
  • 1/2 cup peanut butter 129g
  • 1/2 cup vegan chicken broth better than bouillon
  • 2 tbsp tamari
  • 1 tbsp sriracha
  • Veggies:
  • 1 tbsp sesame oil 15ml
  • 1 can whole young corn spears 223g
  • 1 yellow bell pepper chopped (115g)
  • 1 small onion chopped (110g)
  • 1 bunch asparagus trimmed and chopped (359g)
  • 1 bunch broccolini chopped (tender stem broccoli) (166g)
  • 1/2 cup cashews 68g
  • 1 cup thinly sliced red cabbage (200g)
  • 22 g green onions chopped
  • 4 garlic cloves minced (20g)
  • minced ginger 7g

Instructions

  1. Prepare the sauce by combining the ingredients in a bowl or large measuring cup. Microwave for 30-60 seconds to soften the peanut butter. Whisk until smooth. Set aside.
  2. Heat a wok on med-high heat. Add sesame oil. Sauté the corn, pepper, onion together two minutes. Stir often.
  3. Add in the asparagus, broccolini and cashews. Keep stirring often. Stir-fry another two minutes or so.
  4. Add in the remaining ingredients. Stir-fry (continue stirring) for another minute.
  5. Add the peanut sauce and mix to combine.
  6. Serve. (Serves three)
