Celebrity chef Matthew Kenney launched an online cooking program, called the Food Future Institute, earlier this month. The course teaches innovative techniques for preparing plant-based meals at home. Students are able to work through the program at their own pace.
According to Kenney, vegan cooking courses are necessary because the “building blocks” are different from cooking animal-based foods. “If you look at French cuisine, there are the mother samples, the stocks, the thickening agents, and sauces,” he told the Beet. “Of course, basic knife skills are the same, but the building blocks are completely different, like making cream from nuts.”
He added: “even the most sophisticated chef doesn’t realize that, so we are teaching it through a very different skillset.”

Through Veecoco’s online cooking course, you can learn how to become a “hero in your [own] kitchen.” The program gives users access to 13 different cooking courses with more than 270 lessons.
