Make This Vegan “Chicken” Salad Sandwich for Your Next Picnic

This is one of my favorite road trip recipes to prepare!

Whenever I plan a picnic, a long car-trip, or anything of that nature, my mind automatically thinks sandwiches and macaroni salad! I’m a simple woman, I guess you could say?

This vegan “chicken” sandwich recipe only calls for a handful of ingredients. These include meatless chicken strips, celery, green onions, vegan mayo, almond milk, and various seasonings. The recipe is so incredibly simple to make. Simply cook the vegan chicken strips, shred them in a food processor (or cut up into thin chunks) and add the other ingredients! Voila! It’s ready to eat.

This one is pretty much my go-to recipe when it comes to vegan “chicken” sandwiches! I hope you like it!

Make This Vegan “Chicken” Salad Sandwich for Your Next Picnic

Ingredients

  • 1 bag beyond meat chicken strips
  • 3 tbsp thinly sliced celery 30g
  • 3 tbsp thinly sliced green onions 17g
  • 1/2 cup vegan mayonnaise 105g
  • 1 tbsp plain almond milk 15ml
  • 1/2 tsp onion powder
  • 1/4 tsp celery salt
  • 1/4 tsp salt

Instructions

  1. Cook the “chicken” strip according to the package instructions.
  2. Shred in a food processor. (Until crumbled/shredded.) Let cool down.

Craving more tasty, meat-free recipes? Try making this vegan parmigiana with homemade chicken seitan cutlets! The recipe calls for cannellini beans, vegan chicken stock, soy sauce, and panko bread crumbs for a scrumptious crunch.

You can also try making this delicious creamy vegan seitan chicken, avocado, and tomato wrap! If you’re not a huge fan of seitan, the recipe’s author says you can always substitute with your favorite meatless alternative. “If you aren’t keen on vegan meats, use the tofu pieces. However, seitan/gluten ‘wheat meat’ has been used in Asia for thousands of years and is tasty, low fat and full of protein–give it a try unless you’re truly allergic,” the author wrote. The wrap is bursting with avocado, tomatoes, vegan mayo, dairy-free yogurt, and lemon juice.

If you’re craving Mexican food, try making this vegan “naked” Taco Bell chicken-style seitan chalupa wrap! It’s a vegan version of Taco Bell’s Naked Chicken Chalupa. The original wrap is breaded and filled with chicken, creamy avocado ranch dressing, lettuce, tomato, and grated cheese. The “veganized” version is packed with plant-based protein. Ingredients include chickpeas, vegan Worcestershire sauce, soy sauce, vegetable stock, breadcrumbs, and various herbs and spices⁠—just to name a few.

This vegan egg and chicken special fried rice also makes for a tasty, hearty dinner!
