On October 31, New York City-based cookie shop chain Chip NYC will launch its first vegan cookie option. The launch of Chip NYC’s vegan cookie coincides with the opening of its fifth location in the Williamsburg neighborhood—its first cookie shop in Brooklyn. Andrea Prunella, Executive Pastry Chef at Chip NYC, used oat milk instead of eggs and coconut oil in place of butter to create a decadent, gooey vegan chocolate chip cookie that rivals Chip NYC’s other cookie offerings.
“Now is the right time to create a vegan cookie because more than ever, people are gravitating towards plant-based diets,” Prunella told VegNews. “At Chip, it has always been our goal to blur the lines of a traditional chocolate chip cookie. In the past, that has meant adding fillings and topping them with elaborate glazes and sprinkles. Recently, after realizing how many requests we have gotten for vegan Chip cookies, we set out to create a version of our Chocolate Chip Cookie. We really wanted to create a vegan Chocolate Chip cookie that would wow anyone who took a bite (even if they aren’t vegan).”
The vegan cookie will be a permanent part of Chip NYC’s rotating menu and available in-store for pick up and for local delivery. In December, the chain will offer the vegan cookie dough on its website for shipping outside of NYC to 16 states across the East Coast.
Another NYC-based business, late-night cookie delivery service Insomnia Cookies, is gearing up to launch its first vegan line—in chocolate chunk, double chocolate chunk, and birthday cake flavors—on November 1 (World Vegan Day).
